Vegan Burger Macaron Love: Part 1

Hello Butterwickers!
We want to tell you a story and no ordinary story but a love story. It was a bit unconventional and led to one of our most creative, delicious, decadent and well let’s face it…..cutest macaron inventions.
We warn you now, this tale will be in two parts. In the first part we will introduce you to the loving couple, Leighton and Andrew, and how their love story led them to our vegan burger macarons.
In the second part, be patient, we will share with you how we went about constructing the vegan burger macarons. And you never know, we might even get your creative juices flowing.

When Leighton met Andrew
So here's our story 🙂. It all began on May 14th 2008….cue flashback scene in our minds…
As many couples do these days, Andrew and I met online. He was in Plymouth and I was 150 miles away in rural Gloucestershire. I was about to move house and as we seemed to get on well, I invited him up for a weekend in my new cottage.
Andrew has a terrible sense of direction and didn't think he'd be able to navigate the country roads, so I suggested that we meet somewhere off one of the M5 junctions. Junction 12 seemed the best one and there happened to be a McDonald's 🍔 there....easy enough for him to find.
I'd just bought a new convertible car so sat in the car park, roof down, trying to look cool 😎. He drove in and smiled...I was hooked! 😍
Although there's a 12 year age difference, we got on so well that we started to arrange alternate weekend visits. We also took a short holiday in Majorca 🌞 in the October of that year. This time together proved that this relationship was going to work.
Fast forward many years....(we had travelled the M5 thousands of miles (we were both working so a move was not practical) and some time of not seeing one another due to the pandemic)....to May 2021 when Andrew used underhand tactics to get me to that same McDonald's 🍔 at Junction 12 of the M5.
Having already asked permission from my two grown up children, he proposed to me right in the middle of McDonald's 🍔! Not one of the staff or 5 other customers batted an eyelid!
Wedding arrangements were started but we wanted something different and memorable. No official photos, no cake! Our guests became our memory holders through their personal lenses.
Whilst browsing the internet, Andrew spotted a picture on the Butterwicks Vegan Patisserie website....MACARONS!
After a couple of messages and phone calls, we knew that we had found just we were looking for. The rest is history… burger macarons!!!!.... Jyoti and Gunny made it happen! 😊😊😊
We had not one but TWO wedding receptions. One at our venue in Herefordshire and one two weeks later in Plymouth and we were delighted to serve the vegan macarons at both receptions.
Our guests absolutely loved the burgers which were visually stunning and the flavours were amazing 😋😋😋!!!
